These peanut butter oatmeal bars are an easy, healthy snack or breakfast. You’ll love these oatmeal breakfast bars filled with peanut butter, oats, and mini chocolate chips.
Chocolate and peanut butter make an irresistible combination. I love them in desserts like fudge, brownies, and scones, and I even drink them together in a smoothie.
My family also enjoys these healthy peanut butter oatmeal bars for breakfast or snack time. They have all the delicious flavor of their dessert cousins, but you can feel even better about eating them because of the oats.
These oatmeal bars have a soft texture, and they stay fresh for about 3 days. They’re great for breakfast or an after-school snack, and they work well for road trips, too.
Peanut Butter Oatmeal Bars Tips
I use a stand mixer to fully combine the ingredients. You can also mix them together by hand. You may end up with small clumps of peanut butter in the batter, but this isn’t a problem.
Be sure to let the bars cool before you cut them. Otherwise, they may crumble a bit. I use a metal spatula to cut them rather than a knife. By cutting straight into the bars with a spatula, you avoid the crumbly edges you may get with a knife.
These bars can be frozen for another time. I usually freeze half the batch in case my family doesn’t eat them all within a few days. They defrost quickly on the counter at room temperature.

Peanut Butter Oatmeal Bars
Ingredients
- 1 1/4 cups gluten free flour
- 1 tsp baking powder
- 1/2 tsp salt
- 2 cups rolled oats
- 2 eggs
- 1/2 cup pure maple syrup
- 1/4 cup coconut milk
- 1/2 cup natural peanut butter
- 2/3 cup melted coconut oil
- 3/4 cup mini chocolate chips
Instructions
- Preheat the oven to 350 degrees and grease a 9x13 inch pan.
- In a small bowl, whisk the flour, baking powder, and salt. Stir in the oats.
- In the bowl of a stand mixer, mix together the egg, pure maple syrup, coconut milk, peanut butter, and melted coconut oil. Add the dry ingredients, and mix to combine. Stir in the chocolate chips.
- Transfer the batter to the baking pan, and press down evenly. Bake for about 25 minutes, or until the top is set and the edges begin to turn brown.
- Cool completely on a wire rack, then cut into 14 bars using a metal spatula or sharp knife. (If you try to cut them before they’re cool, they may crumble a bit.) Store in an airtight container for up to three days, or freeze for later.
