This unique artichoke garlic scape pesto is a delicious, healthy appetizer. This recipe is the perfect dip for chips or vegetables.
I’ve been introduced to lots of new foods ever since I joined a local farm share. Garlic scapes are one of the many things I didn’t know existed before joining a CSA. These stalks of the garlic plant look a bit like giant scallions, but they taste like mild garlic.
This unique pesto is a great way to use garlic scapes. I mellow them out a bit by mixing them with artichoke hearts and walnuts. The flavor is perfect for garlic fans, and it’s a delicious, healthy dip recipe for chips, pita bread, or veggies. Try this artichoke garlic scape pesto during the brief season when garlic scapes are available.
Have you tried garlic scapes? I’d love to hear how you use them, so please share your recipes and ideas in the comments.
