Easy Granola Recipes

These easy granola recipes are great to have on hand for a healthy breakfast. Try my basic vegan, gluten free granola recipe, or mix it up with one of the flavorful variations.
Homemade granola is one of my favorite things to have for breakfast. There are so many different flavor combinations you can try. And by making it at home, you can control the sweetness to suit your tastes.
Granola is so quick and easy to make. I set the oven to preheat to 275 degrees, and if I work quickly, I can get the ingredients mixed together before the oven is even ready.
Does Granola Have Gluten?
Somes granola does contain gluten. I like to make gluten free granola using gluten free oats, brown rice crisp cereal, shredded coconut, and nuts as the base.
There are lots of other gluten-free options for a granola base, including quinoa, chia seeds, and sunflower seeds.
Vegan Granola
Granola can be made using butter, but instead, I keep it vegan by using coconut oil.
A mixture of pure maple syrup and coconut oil binds the ingredients together. I add a little spice according to the specific flavor in these easy granola recipes. Cinnamon works well with a lot of different combinations.
Easy Granola Recipe Tips
I typically include dried fruit as part of my granola recipes. In order to avoid burning the fruit (especially raisins), I recommend stirring them into the cool granola after itโs cooked.
For all of my granola recipes, you can adjust the proportions to suit your taste. Add extra nuts and cut back on the oats or rice cereal. If youโre looking for a sweeter granola, you can add a little extra pure maple syrup and bake it for a few extra minutes to solidify.
Serve granola with your milk of choice, or sprinkle it over yogurt. If you have fresh berries on hand, mix them into the granola just before serving.
Store homemade granola at room temperature in an airtight container. It should keep for at least a month, although it never lasts that long in my house.

Easy Granola Recipe
Ingredients
- 3 cups rolled oats
- 1 1/2 cups brown rice crisp cereal
- 1 cup unsweetened dried coconut
- 2 cups mixed nuts (almonds, cashews, walnuts)
- 1/2 tsp cinnamon
- 1/2 tsp salt optional
- 1/3 cup maple syrup
- 1/2 cup coconut oil
- 1 tsp vanilla extract
- 1 cup dried fruit e.g. raisins, dried cranberries, apricots
Instructions
- Preheat the oven to 275 degrees.
- Mix the oats, rice crisp cereal, coconut, nuts, cinnamon, and salt (if using) in a large bowl.
- In a small bowl, stir together the maple syrup, coconut oil, and vanilla.
- Pour the liquid ingredients over the dry ingredients and stir to coat.
- Place the mixture in a 9x13 inch baking dish and press down the granola lightly to even it out. Bake for about an hour, or until it begins to brown. When you lightly touch the surface of the granola, it should feel solid and not soft at all.
- Place the pan on a rack to cool, and let it cool completely. Use a spatula to break the cooled granola into chunks, then transfer it to a bowl. Stir in the dried fruit.
- Store the granola in an airtight container at room temperature. It keeps for at least a month.

This basic granola recipe costs a total of $5.67. It yields 9 cups of granola, or 12 servings of 3/4 cup each. The cost per serving is $.47, which is a great deal for a nutritious, higher protein real food breakfast.

How long does it keep for? Want to make up a few batches so it’s quick and easy, but does it lose its taste after a few days or is it okay to store for the week (or more)?
