I actually have a little problem with smoothies. I can’t drink them on their own without some food. My stomach seems to need something solid to work on, and a smoothie by itself can be unsettling.

Enter the smoothie bowl. By making a thicker smoothie and putting it in a bowl, I can top it with some hearty ingredients to make it into a meal. A high-powered blender is a great tool to get just the right texture.

Any kind of smoothie can be turned into a bowl. I love this green smoothie bowl topped with berries, coconut, and walnuts. The avocado, walnuts, and coconut milk provide filling fats, and the other ingredients are packed with nutrients.

Ingredients

  • 2/3 cup full-fat coconut milk
  • 2 ripe bananas
  • 1/2 avocado
  • 1 kale cube or a small handful of kale
  • 1/4 cup mixed berries
  • 1 tbs unsweetened shredded coconut
  • 2 tbs diced walnut

Instructions

  • In a high-powered blender or food processor, combine the coconut milk, banana, avocado, and kale. Process until smooth. Taste the smoothie and add a little pure maple syrup if needed.
  • Divide the smoothie into two bowls. Top with berries, shredded coconut, and diced walnut. Serve immediately.

    I can’t just drink a smoothie either, but bowl form is much more doable!
