Chili is one of my go-to comfort foods. I love the taste of chili, but I don’t always have time to let it simmer on the stove to develop its rich flavors.

That’s where the Instant Pot comes in. By pressure cooking the chili for just 10 minutes, it gets that classic richness without a long stovetop simmer. This recipe can be on the table in less than 30 minutes from the time you start sauteing the onion.

Instant Pot Beef Chili Tips

This pressure cooker beef chili is a delicious combination of beef, beans, and vegetables. It makes 8 servings, so you can freeze the leftovers for another night or save it for lunch later in the week.

Saute the onion, celery, and garlic right in the Instant Pot to deepen the flavors before pressure cooking the chili.

Let the pressure release naturally for 10 minutes after the cook time. This will allow the flavors to continue to develop. Serve this Instant Pot beef chili warm, topped with scallions, tortilla chips, cheese, or any of your favorite chili toppings.

For a vegetarian version, try my butternut squash chili or classic vegetarian chili. You can’t go wrong with any of these comfort food dishes, especially with a side of cornbread.

Ingredients

  • 1 tbs olive oil
  • 1 1/2 lbs ground beef
  • 1 small onion chopped
  • 3 ribs celery sliced
  • 1 clove garlic crushed
  • 28 oz tomato sauce
  • 1 cup chicken stock
  • 4 oz diced chili peppers
  • 2/3 cup corn
  • 6 cups cooked pinto beans
  • 2 tbs chili powder
  • 1 tsp salt or to taste
  • 2 tsp cumin

Instructions

  • Set the Instant Pot to Saute. Add the olive oil and meat to the pot and saute until the meat is brown. Add the onion, celery, and garlic, and cook for two minutes.
  • Add the remaining ingredients to the pot. Place the top on the pot and turn the vent to Sealing. Set to Manual for 10 minutes. When it’s done cooking, let the pressure release naturally for about 10 minutes before opening the lid.
  • Serve warm. Some topping ideas include scallions, crushed tortilla chips, guacamole, cheese, and cilantro.

    Annemarie – I just found your website and I gotta say I am saving every single recipe. I LOVE the simplicity of everything – the ingredient lists, the low calorie values, the easy to read recipes & nutritional values. I love that I’m not scrolling through 8 pages of popups, pictures, & “story” to get to the actual recipes. Please keep going. I can’t wait to try this chili! Chili is one of my favorite go-to meals.

    I got an Instant Pot over a year ago and I’m still getting used to it. This looks like a perfect recipe to take it out for another spin:) – I love chili and especially when it only takes minutes to throw together.
