These raspberry vanilla overnight oats are an easy, healthy breakfast. Try this recipe for a delicious gluten-free, vegan treat in the morning.
This time of year, I really need quick breakfasts that are ready when I wake up. The dark mornings make it so hard to get out of bed, but it’s a little easier when I know that a delicious breakfast is waiting for me downstairs.
These raspberry vanilla overnight oats are the perfect thing for times like these. They’re so easy to put together at night. In the morning, they can be eaten right out of the fridge or heated up briefly.
The raspberry flavor reminds me of summertime, and the mini chocolate chips make this breakfast feel like a treat. (I like Enjoy Life mini chocolate chips for a healthier, allergy-friendly version.) You can also add a handful of diced nuts for some extra protein if you’d like.
To make this recipe, simply stir together the ingredients and layer them in jars or other storage containers. Adjust the amount of pure maple syrup to suit your tastes.

Raspberry Vanilla Overnight Oats

- 2 cup mason jars (or similar)
Ingredients
- 3 1/4 cups coconut milk
- 1 tbs maple syrup
- 1 1/2 tsp vanilla extract
- 3 cups rolled oats
- 2 cups raspberries
- 2 tbs mini chocolate chips
Instructions
- In a large bowl, stir together the coconut milk, maple syrup, and vanilla extract. Add the oats and stir.
- Put half the oat mixture in the bottom of each jar, then add a layer of raspberries. Top with the remaining oatmeal and raspberries. Sprinkle with chocolate chips.
- Refrigerate overnight. In the morning, these can be served cold, or you can heat them briefly on the stovetop. (Note: If you’re heating them, you may want to add the chocolate chips after they’ve been heated.)
