Watermelon is a sure sign of summer around here. It’s always on sale at the market this time of year, and we get lots of it from our farm share later in the season. We love snacking on it plain, but it’s also fun to use it in different types of recipes.
This fresh watermelon salsa is a surprising burst of flavors. Typical salsa components like cilantro, lime, and cumin work really well with the bright taste of watermelon and fresh mint. My family was surprised by how much they enjoyed this, so I’ll be serving it often this season.

Ingredients
- 3 cups chopped watermelon
- 1 tbs chopped fresh mint
- 1 tbs chopped cilantro
- 1 tbs diced shallot
- 1 tbs lime juice
- 1 tbs olive oil
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp cumin
Instructions
- In a large bowl, stir together the watermelon, mint, cilantro, shallot, lime juice, and olive oil. Sprinkle with the salt, pepper, and cumin, and stir again to coat evenly.
- Refrigerate the salsa until you're ready to serve it. This will give the flavors a little time to mingle. Serve within three days.
