These apple pie overnight oats make a quick, healthy breakfast. Stir the ingredients together in the evening, and breakfast is ready when you wake up in the morning.
When I was a child, I loved the little packets of instant apple cinnamon oatmeal. Now I know that many instant oatmeal packets are highly processed and full of unnecessary additives. Luckily I can make an even tastier “instant breakfast” by soaking whole food ingredients in a jar overnight.
These apple pie overnight oats are so easy and delicious. It takes just a few minutes to stir together the ingredients, and the flavor is perfect for fall.
This recipe is based on my apple pie Larabars. Featuring dried apples and dates, this meal is just sweet enough to taste like a treat at breakfast time.
Where to Get Dehydrated Apples
You can use chewy dehydrated apples like they carry at Trader Joe’s for these apple cinnamon overnight oats. Another option is to make a batch of homemade apple chips.
If you can’t find chewy dried apples, you can also use freeze dried apples, which may be more widely available in your area. The freeze dried apples will become chewy after soaking overnight with the oats.
Another option is to stir in fresh chopped apples. When using fresh apples, I like to add them to the overnight oats in the morning. This gives a nice crunchy texture to the recipe.
Apple Pie Overnight Oats Tips
This recipe makes two hearty servings. If you’re feeding a crowd, you can easily make more and they’ll last for several days in the refrigerator.
If you don’t have dates, feel free to substitute a couple teaspoons of pure maple syrup instead.

Apple Pie Overnight Oats
Ingredients
- 1 1/2 cups coconut milk or other milk
- 1 1/4 cups rolled oats
- 3 medium Medjool dates (or 2 large dates, pits removed)
- 1/2 cup dehydrated apples
- 1/4 tsp cinnamon
- 1/8 tsp ginger
- 1/8 tsp salt
Instructions
- In a medium bowl, stir together the coconut milk and oats.
- Place the dates and apples in a food processor and finely chop them.
- Stir the dates and apples into the oats, and add the cinnamon, ginger, and salt.
- Divide the mixture evenly into two pint-sized mason jars. Cover and refrigerate overnight.
- In the morning, you can serve this cold or warm it up on the stove.

How do you think fresh apple will hold up? I’ve made baked apple oatmeal and it’s fine. I wonder if fresh apple will work in this recipe. Thoughts?
Suzanne, this should be fine with applesauce or diced fresh apple. You could also stir in the apple in the morning when you’re ready to eat. Overnight oats are very adaptable!
