Blueberry Overnight Oats

Overnight oats are one of the easiest make-ahead breakfasts out there, and these blueberry overnight oats are so light and delicious. They’re simple to prepare, especially since no cooking is involved.
I love the flavor of this easy breakfast. Creamy coconut milk and mashed banana give it a tropical twist. I add chia seeds to the oats to make this meal extra filling, and the blueberries give it lots of fruity flavor.
Blueberry Overnight Oats Tips
To make these blueberry banana overnight oats, stir together the ingredients in a large bowl, minus the blueberries. For hearty servings, divide the mixture into 4 pint jars. If you have a small appetite in the morning, this recipe can be divided into 6 servings.
I like to layer half the oat mixture, followed by half the blueberries. Then top with the other half of each, and garnish with shredded coconut, lemon zest, and/or slivered almonds if desired.
Cover each jar, and refrigerate overnight. These blueberry overnight oats can be eaten cold right out of the fridge. If you prefer them warm, you can microwave the oatmeal for 30 to 60 seconds in the morning. You can also heat them in a small pot on the stove.

Ingredients
- 3 1/4 cups coconut milk
- 1 tbs maple syrup
- 1/4 cup mashed banana (about 1/2 banana, 3 oz)
- 3 cups rolled oats
- 2 tbs chia seeds
- 1 1/2 cups blueberries
Instructions
- In a large bowl, stir together the coconut milk, maple syrup, and mashed banana. Add the oats and chia seeds, and stir to combine evenly.
- Using 1 1/2 cup or 2 cup jars, place about 1/2 cup of the oat mixture at the bottom of each jar. Top with berries, then add another 1/2 cup of the oat mixture, then more berries. Cover the jars and refrigerate overnight.
- In the morning, the blueberry overnight oats can be served cold, or you can heat them briefly on the stovetop or in the microwave. Garnish with lemon zest, slivered almonds, or shredded coconut.
